Avocado Fries

Last week I wanted to surprise my wife with a little afternoon appetizer. I know what ya’ll are probably thinking with that first sentence, but don’t get me wrong, it was going to be a surprise that she has never had before, nor me for that matter. As many of you probably love avocados, we are pretty much bunched up in that group as well. We are big fans of the avocado, and typically I am only serving them up in the classic guacamole, or slivered in some delicious tacos, or better yet topped onto any style of sandwich.

Don’t get me wrong, I’ve also swerved down a different path and created things such as my recent avocado deviled eggs which were awesome, as well as using them in a shrimp and avocado wonton salad which my wife absolutely loves. This time around it was going to be something a bit different. This was an idea I have been wanting to try for some time now, and believe it or not, it was the avocado fry.

Avocado Fries Recipe

When I informed my wife what I was about to make, she questioned it, much like I questioned it, and trust me, you will love these. Where have these been all of our lives? Nature’s butter, lightly fried, will blow your mind.

Let’s get started.

Ingredients:

Start by running your knife around the avocado. Separate one half from the other, then whack the pit with your knife, give it a twist, and remove the pit.

Run a small spoon between the skin and the avocado, and get each half of the avocado placed onto a cutting board.

Slice each half in half. Then those in half. If they are thicker and you have big slices, then try slicing them in half again, lengthwise. Think french fries, only with avocado.

Place the oil into a medium sized skillet, and let this come up to a medium heat, just enough time to begin preparing the fries.

Now it’s time for the dredge.

Season the flour with the lemon pepper and mix that around.

Smash the saltine crackers in a sealable plastic bag.  Dump those onto a plate.

Take an avocado fry and toss in the flour, then move that into the egg mixture, and then place onto the crumbled crackers. Give a little shake.

Gently place the avocado fries into the hot oil, and cook for a couple of minutes on each side until they are golden brown. These will not take long. Once golden, remove,  and place them onto a plate lined with paper towel. Season immediately with a pinch or two of salt.

Plate and serve with your favorite dipping sauce.

When I called my wife over to try one (many), we both picked up an avocado fry, almost as though we were going to make a cheer, and took a bite. We both sat there quietly. I began talking about them, then she began talking about them, and we agreed, these things kicked ass. You get this crispy exterior from an awesome saltine cracker breading, then, believe it or not, the avocado holds up its texture. You would think it would fall apart, but again, nature’s way of giving us  an awesome fruit, only lightly fried. After we devoured the avocado, I only began talking about ways in using them in Mexican dishes, beer snacks, and a multitude of other awesome ideas. Give these a shot. They will get you thinking, and actually wanting more, and heck, who can go wrong with a great avocado?
