Recently my wife was craving a bit of beef and so we were bouncing ideas off of one another ads to what to make for dinner, and one that contained beef. I immediately thought of things like steak but my wife is a fan of ground beef and so I thought I would start there. As we came up with a few ideas, I threw out the idea of a ground beef stroganoff recipe. It’s still comfort casserole season in Wisconsin and there is still a chill in the air, so I thought what a win/win situation and hence this recipe. It turned out super delicious and an ultimate comfort dish that is all done in one large skillet, well for the most part.
Let’s get started.
Ingredients:
- 1 1/4 lb ground beef
- 1 lb mushrooms, debris removed, and sliced (1/2 button, 1/2 cremini)
- 1 tbsp neutral oil
- 5 cloves garlic, minced
- 1/2 medium yellow onion, diced
- salt and pepper to taste
- 2 tbsp all purpose flour
- 14 oz beef stock
- 1/2 pint heavy cream
- 1 tbsp worchestershire sauce
- 1/3 cup sour cream
- 1/2 lb penne pasta, cooked al dente
Start by heating a large skillet on medium heat for a few minutes.
Add in your sliced mushrooms, stir briefly, and let cook until softened, about 10-15 minutes. Season with a pinch of salt and pepper. Stir then set it to the side.
Clean out the skillet or pan should you desire, then add in your oil, and ground beef. Break up the ground beef with your wooden spoon or spatula and let it cook on medium heat for about 8 minutes. Do not disturb.
Once nicely browned on the bottom side, flip the ground beef over and continue cooking. Once browned, move the beef to one side of the pan then use a spoon and remove all of the excess fat. Keep about 1/2 tbsp of the fat left in the pan, then add in the onions and garlic. Give another good stir and cook until the onion softens, about 6 minutes or so.
Season with a bit of salt and pepper, and give a good stir.
Add in the beef broth, worchestshire sauce, and heavy cream. Give a good stir and let this come up to a small boil before reducing the heat to low. Cook for about 15 minutes. During this time make your pasta according to your directions.
A few minutes before serving add in the sour cream ensuring a good stir to make a nice smooth sauce.
When you are ready to serve, add the pasta to a serving plate or bowl, and top with a fair amount of the ground beef stroganoff mixture. Enjoy!
