Pimento Cheese

Pimento cheese is probably either something you have seen at the grocery store (don’t buy), heard of, or never heard of. Pimento cheese is basically a Southern food. I live in Wisconsin, and to me, it is every bit of Northern food as it is a Southern one. Pimento cheese is something that is way too easy to make, and is something to is way too delicious.

Pimento Cheese Recipe

Very few ingredients bring an amazing flavor to pretty much anything you put it on. As I have been wanting to sneak some pimento cheese into one of my recipes lately, I thought I would share the recipe.

Ingredients:

  • 1 cup of Sharp cheddar cheese, grated
  • 3 tbsp mayonnaise
  • 4 tbsp pimentos
  • 1 clove of garlic, grated
  • 1 pinch of cracked black pepper

That’s it. Very basic.

To make the cheese, add everything to a mixing bowl, and do just that, mix it very well. Cover with plastic wrap and place in the refrigerator for at least one hour.

So, now what? Well, what you do not know is how amazing this pimento cheese is. Unwrap it and get ready to serve. For me, I spread it on a pretzel roll with a hot dog and caramelized onions.  Shortly later I found myself spreading it on pretzels, and crackers. It was soon to run out, and probably the best as it has this addicting flavor. A bit of that garlic bite with the tanginess from the mayonnaise, and that wonderful Wisconsin cheese flavor, and well, let’s not forget the pimentos which are those wonderful cherry peppers.

Pimento Cheese Ingredients

Feel free to use as a sandwich spread, or dip vegetables into it. Whatever you decide, I guarantee you are going to like it.

Let me just say, that wherever you are, whether it be in the north, south, east, or west, pimento cheese is something that you have to try! Hope you enjoy.

I love pimento cheese – and homemade is absolutely the best. I make mine with 2 parts cheddar and 1 part pepperjack. I add a couple dashes of Tabasco Jalepeno sauce. It’s so good, I get recipe requests every time!
